Greetings, fellow foodies and fans of whatever WDW is servin' up! I asked, you voted, I complied. For this go-round, I whipped up some awesome mac and cheese, Jiko style. For those of you just joining the blog, Jiko is probably my favorite restaurant in all of WDW. And while the mac and cheese is best served alongside some amazing filet mignon, it's pretty good on its own and it only took about 30 mins to make.
Ingredients:
1/4 cup butter
1/4 cup flour
1 quart whole milk
1 1/4 cups Quattro Fromage (4-cheese mixture of asiago, provolone, fontina, and gruyere cheeses)
2 pounds elbow macaroni

Let's Cook:
1. Prepare the macaroni according to the directions on the package.

2. Make a roux with the flour and butter over low heat. What's a roux, you ask? Sounds fancy, but it's super easy. Heat the butter until it's nice and melty, then slowly stir in the flour. You get a frothy creation that looks like this:
(Yes, I like A LOT of cheese.) The final sauce should be kind of bubbly and frothy, but most of all, it should taste good when you test it.

4. Pour the sauce over the macaroni and heat through in a moderate oven.
