Twinkie Tiramisu - Pop Century Resort

If you've been to Disney's Pop Century Resort, you know it's allll about the throwback, and the Twinkie Tiramisu is just one of the classic desserts served in the Classic Hall. Warning: eating may cause sugar shock and angry lectures from your dentist. Proceed at your own risk.

Ingredients

12 Twinkies, sliced 1/2 inch thick
cocoa powder, for dusting

Espresso Syrup

1/3 cup water
1/2 cup sugar
2/3 cup brewed espresso coffee
1/4 cup brandy (optional)

Mascarpone Filling

1 1/2 cups heavy whipping cream
1/3 cup sugar
2 teaspoons vanilla extract
1 lb mascarpone cheese, softened

Twinkie Time!

Let's start with the espresso syrup:
1. Combine water and sugar in a small saucepan and bring to a simmer, stirring occasionally until all the sugar is dissolved.

2. Remove from heat, cool, and add the coffee and brandy (I used coffee liquer, because it seemed weird to buy a whole bottle of brandy for this)


Onto the filling:

3. Whip the cream, sugar, and vanilla together until soft peaks form.

4. Fold into the softened mascarpone.

To assemble:

5. Place a layer of Twinkie slices in the bottom of a baking or gratin dish.

6. Drizzle with half of the espresso syrup and spread half of the mascarpone filling on top.

7. Repeat with the remaining Twinkie slices, syrup, and filling. Smooth the top with a spatula.


8. Cover with plastic wrap and refridgerate for up to 24 hours before serving. Dust the top of the tiramisu with cocoa powder before you plate.
