10 Disney Wishes for 2010

It's almost time to say goodbye to 2009, the year that brought us the Wishes Dessert Party, serious monorail troubles, and G-Force. Since I can't make resolutions on behalf of Disney, and since I can't keep my own New Year's Resolutions anyway, here are 10 things I'd love to see happen in the next year:

1. Up wins Best Picture. (okay, I'll settle for a Best Picture nomination)

2. Disney announces their next Princess will have a normal-sized body.

3. The Wonders of Life pavillion reopens, updated and awesome.

4. The temperature on the WDW shuttle buses is adjusted from "arctic chill" to "pleasantly cool."

5. Bottles of the international sodas displayed at Club Cool are made available for purchase.

6. Eric Idle becomes involved in a major public image scandal and as a result, Disney is forced to revert back to the original concept of Journey Into Imagination.

7. The Backlot Tour at Disney's Hollywood Studios is updated to become more relevant and reflective of today's moviemaking techniques (CGI demonstrations, anyone?).

8. Walt Disney Pictures realizes that audiences want to see great, original films and that constantly making sequels is a cop-out. Take some risks!

9. Three words: More Segway Tours.

10. One mug, one World. WDW will stop making guests buy new refillable mugs for every resort, every trip. Instead, guests pay a flat rate upon check-in for unlimited refills throughout their stay (regardless of what year the mug is from).

Twinkie Tiramisu - Pop Century Resort

If you've been to Disney's Pop Century Resort, you know it's allll about the throwback, and the Twinkie Tiramisu is just one of the classic desserts served in the Classic Hall. Warning: eating may cause sugar shock and angry lectures from your dentist. Proceed at your own risk.

Ingredients

12 Twinkies, sliced 1/2 inch thick
cocoa powder, for dusting

Espresso Syrup

1/3 cup water
1/2 cup sugar
2/3 cup brewed espresso coffee
1/4 cup brandy (optional)

Mascarpone Filling

1 1/2 cups heavy whipping cream
1/3 cup sugar
2 teaspoons vanilla extract
1 lb mascarpone cheese, softened

Twinkie Time!

Let's start with the espresso syrup:
1. Combine water and sugar in a small saucepan and bring to a simmer, stirring occasionally until all the sugar is dissolved.

2. Remove from heat, cool, and add the coffee and brandy (I used coffee liquer, because it seemed weird to buy a whole bottle of brandy for this)


Onto the filling:

3. Whip the cream, sugar, and vanilla together until soft peaks form.

4. Fold into the softened mascarpone.

To assemble:

5. Place a layer of Twinkie slices in the bottom of a baking or gratin dish.

6. Drizzle with half of the espresso syrup and spread half of the mascarpone filling on top.

7. Repeat with the remaining Twinkie slices, syrup, and filling. Smooth the top with a spatula.


8. Cover with plastic wrap and refridgerate for up to 24 hours before serving. Dust the top of the tiramisu with cocoa powder before you plate.

Chocolate Cookie Mousse - Cape May Cafe, Beach Club Resort

Let's face it - mousse is awesome. It's one of those perfect desserts that's still manageable after a big meal, and also works as an anytime snack. And visitors to the Beach Club resort will tell you that the Chocolate Cookie Mousse at Cape May's is one of the best. And so, I made it. And ate it all. Possibly in the same day.


Ingredients

6 Oreo cookies
2/3 cup white chocolate
1 cup heavy whipping cream

1/2 teaspoon granulated gelatin
3 egg yolks


Mousse It Up!


1. Crumble cookies into teeny pieces. This can be done with a food processor, or just put the cookies in a sealed ziploc bag and pound them with a mallet.


2. Melt white chocolate and remove from heat. (I don't have a double boiler, so I used the microwave for this step.)


3. Whip the heavy cream until medium-firm peaks form.


4. Pour 1/4 of the whipped cream into a saucepan and sprinkle in the gelatin. Let sit for about 3 minutes, until the gelatin softens and swells.



5. Heat gelatin over low heat, stirring constantly, until gelatin is dissolved.



6. Remove from heat and gently blend in egg yolks.


7. Add the melted chocolate, stirring fast to avoid lumps.



8. Fold the remaining whipped cream and cookies together, then fold into the white chocolate mixture.


9. Pour into serving bowls and refrigerate for 2 hours before serving. Ta-da!
